A friend told me she had some extra strawberries and asked if I would like some. Wow, was all I could say when my husband sent me a picture of what she left for me. My husband and I cleaned and froze most of them and put some aside for various recipes. I treated my husband to a strawberry daiquiri after he helped me clean and package the ones I froze.
I have been asked a few times to make some rum cupcakes. Although I am not a fan of boozed up cupcakes, I decided to give them a try. I had some left over coconut cupcakes. I mixed some rum with some powdered sugar to make a glaze. I then took a toothpick and poked holes in the tops of the cupcakes and poured the glaze over the cupcakes. I then made some coconut butter cream frosting and added rum to it. Whala!
I started my Christmas baking with these cute and delicious red velvet cupcakes. I melted some vanilla candy wafers and drizzled it over each cookie for a festive look.
I then made rum cupcakes and rum balls. The cupcakes have a rum syrup poured over them. I am tired so I will frost them tomorrow.
