Army Strong Pull apart cake

This is a wonderfully delicious way to say welcome home to a soldier. Although it totally looks like a sheet cake, it’s actually made of strawberry cupcakes. Everything is edible. The dog tags are made of fondant which I spayed with silver edible color spray. The image is an edible image I designed and had printed at my local bakery. The letters are made of melted vanilla wafers and colored with edible spray and food color.

Vanilla Cupcakes with Blueberry Frosting 

Using blueberries is a natural way to get a beautiful color frosting. The blueberries also give a very flavorful and fruity taste to the frosting. To make the frosting- I placed about 1/2 cup of  blueberries in a small saucepan on medium heat. I added 1 tablespoon of sugar and 1/2 tablespoon of cornstarch and let it simmer until it thickened. I let it cool while I mixed together 1 cup of softened butter, 1 teaspoon of vanilla and 2 cups of powdered sugar and beat until fluffy. I then put the cooled blueberries in a food processor to make a sauce. I added the sauce to the butter mixture and beat until blended. I had previously made the mini flowers and leaves and kept them frozen for use when needed.

Cupcake Shoe Cake

A friend of mine sent a picture of a cupcake shoe to me over a year ago and I had told her I would make it one day. Well today I made one.  The cake is marble with pink and purple buttercream frosting. The shoe is made with a red velvet cupcake. I used a graham cracker and smoothed white chocolate on it for the sole of the shoe. The heel is made with a sugar cone dipped in white chocolate.

Over the past 2 weeks, I have had the opportunity to create 2 cupcake displays using this lovely clear display stand. This stand can hold 48 cupcakes, however, if the cupcakes are packed in clear containers only about 24 will fit onto the display stand.
