Red Velvet Cupcakes

I just finished baking a batch of red velvet cupcakes that came out perfectly. I took the eggs out last night and poured the cup of buttermilk about 5 hours earlier today. It is important to ensure the eggs and milk are at room temperature. I used the standard recipe. I mix the sugar, oil and food color well before adding the eggs.  I also let the batter sit in the pan for a few minutes before placing them in the oven. My bake time is 17 minutes.
